Award Winning FUD Cotija cheese originated in the Mexican state of Michoacán in the town of Cotija. It is still being produced some 400 years after it was first introduced.

Cotija cheese is a cow’s milk hard cheese that is grainy and crumbly with a resemblance to feta cheese.

The grated version of cotija cheese resembles Parmesan cheese and can be used in the same way: sprinkle some on top of pasta, in tacos, or in such soup dishes as Tarascan (pinto bean and tomato).
